Made from contract-grown Yamada Nishiki polished to 55% and fermented with Kumamoto No. 9 yeast, this junmai carries a soft apple-tinged fragrance and a smooth, well-balanced umami that the brewery describes as flowing clean like a clear stream. Brewed in Fukuoka's Kama district with water from the Kama River basin.
