Yume Ikkon rice polished to 60% is the foundation of this junmai under the Tamanoi label from Kanhokuto Shuzo in Fukuoka. Brewed in small batches using low-temperature ginjo fermentation, it won the Fukuoka Governor's Award at the 12th Fukuoka Sake Appraisal and delivers a well-rounded umami with a clean, food-friendly finish.
