Yamada Nishiki polished to 50% produces this daiginjo under the Kikutamanoi label from Kanhokuto Shuzo in Fukuoka, drawing on the brewery's historic well that gave rise to the original Tamanoi name dating to 1729. Brewed with Kuma-kei Kyokai No. 9 yeast, it shows a gently apple-tinged aroma and a clean, composed structure.
