Kame no O rice, a rare heirloom variety difficult to cultivate and known as a phantom rice, is polished to 47% for this junmai daiginjo from a Himeji brewery founded in 1835. The Kamenoko series from this brewery has earned recognition in international competitions, including gold at Kura Master 2022, for its ability to draw out distinctive concentrated rice flavor through extreme milling without the bitterness typical of such polish levels.
