Hyogo-grown Yamada Nishiki polished to 55% forms this junmai ginjo, brewed using the brewery's own yeast culture at a Himeji brewery founded in 1836. It shows a pear-like fruity aroma with a gentle, balanced palate of Yamada Nishiki sweetness, umami, and clean acidity, and has earned five consecutive gold medals at the National New Sake Competition.
