A nama (unpasteurized) version of the Shirasaginoshiro junmai ginjo from this Himeji brewery founded in 1836, retaining the fresh, lively character of the unheated sake. The raw bottling preserves vivid fruit aromas and a crisp, clean finish that pasteurization would otherwise soften.
