A yamahai junmai daiginjo brewed at Suzuki Shuzoten Nagaigura in Nagai, Yamagata, using 100% Okayama Omachi rice polished to 45%. The traditional yamahai method develops a natural lactic acid starter, producing deep umami, moderate acidity, and a broad, enveloping richness. Designed to evolve further with bottle aging, it suits warming as well as chilled serving.
