Fuji Musume Shuzo, founded in 1943 through the consolidation of eight breweries in western Kochi's Hata district, is the only sake producer in Shimanto City, home to the Shimanto River, celebrated as Japan's last clear river. Brewed with underground water from the Shimanto River basin and a philosophy centered on moderate aroma with deep, food-compatible flavor, this Honjozo delivers the soft, gentle character characteristic of this remote coastal Kochi brewing tradition.
