The Shimanto Kizuna (Shimanto Bond) Junmai Ginjo Genshu Black Label from Fuji Musume Shuzo in Shimanto City, Kochi, is an undiluted expression named for the connection between the brewery and Japan's last clear river, the Shimanto, whose underground water feeds the sake. Founded in 1943, this brewery, the only sake producer in Shimanto City, uses locally grown Kochi rice and channels the clean purity of the Shimanto basin into a robust, full-strength ginjo genshu.
