Chiyo Nishiki, the Fukushima Prefecture sake rice, is used for this junmai from Wakashimizu Shuzo in Hirata Village, Fukushima, bearing the name of the brewery's eighth-generation head Kanzaemon. The all-slot-pressed brewery uses Chiyo Nishiki for all its sake.
