Top-tier daiginjo from Suzuki Shuzo in Saitama, using Yamada Nishiki from Hyogo's special A region, polished over 75 hours to just 35% of the original grain. Drawing water from a private well fed by the Chichibu aquifer, the sake is refined and elegant with restrained fragrance and a soft, precise structure.
