A namachozo-style Honjozo from Chiyonohikari Shuzo in Myoko City, Niigata, brewed with Gohyakumangoku polished to 54%. The namacho process, tank pasteurization before cold storage then bottled unpasteurized, preserves freshness while allowing gentle aging, giving this honjozo a lively quality within the brewery's characteristic light, soft Niigata style.
