Tempuku uses Yamada Nishiki polished to 54%, an elevated combination for Tokubetsu Honjozo grade at Chiyonohikari Shuzo in Myoko City, Niigata. Founded in 1860 in deep snow country, the brewery brings its characteristic soft water and cool fermentation techniques to this Yamada Nishiki base, achieving a more fragrant, structured honjozo than the standard grade.
