Chiyonohikari Tokubetsu Honjozo is crafted from Gohyakumangoku polished to 54%, higher than typical table sake polishing, lending elevated refinement to this honjozo. Founded in 1860 in Myoko City, Niigata's famous snow country, the brewery uses snowmelt water to produce a light, crisp sake in keeping with Niigata's renowned tanrei karakuchi dry style.
