Sagae no Sho (寒河江之荘) is a yamahai Junmai from Chiyokotobuki Toraya named after the historic Sagae estate in Yamagata. Using Toyo Kuni rice polished to 70% with the traditional yamahai slow lactic acid cultivation method, this expression develops the characteristic wild, tangy complexity and firm acidity that yamahai brewing is prized for.
