The Toraya label's autumn hiyaoroshi is a single-pasteurized Junmai Ginjo aged through summer from Chiyokotobuki Toraya in Sagae, Yamagata. Brewed with Dewa Sansan polished to 55% using the mineral-rich hard water of the Mount Gassan aquifer, this seasonal release arrives with a smooth, integrated depth that distinguishes matured namazake.
