Description
Akishika's Tokubetsu Junmai occupies the core of the brewery's range, qualifying for its special designation through the use of premium sake rice or a reduced polishing ratio, consistent with Oku-san's philosophy that minimally milled Yamada Nishiki holds more concentrated flavor. Since 2004 the entire Akishika lineup has been Junmai, and since roughly the same period all expressions have been muroka, bottled without charcoal filtration. This bottling offers approachable entry into Akishika's characteristic style: dry, umami-rich, and built for food.
