Abukuma Omachi Junmai Ginjo uses Omachi, Japan's oldest known sake rice variety, in a junmai ginjo from Genyou Honten in Fukushima. Omachi's distinctive deep umami and rich texture provide a strikingly different profile from lighter ginjo styles, shaped by the clean, cold water of the Abukuma Highland.
