明治初期に新潟県中越から移住した初代「杉田房吉」が「酒らしい酒」をコンセプトに創業しました。初代は自ら酒造りを行い、泉中村上（中村上泉）の素晴らしい水質に惚れ込んでその水で酒造りを始めました。使用水は地下水で、水系は「日光山伏流水」です。蔵の信条は「仕事に手抜きなし」です。
