Yamada Nishiki polished to 55% is pressed as a muroka namagenshu junmai ginjo, delivering an unfiltered, undiluted expression of the Okayama terroir. The brewery, founded in 1889 near the Nakayama Shrine in Tsuyama, uses Okayama-grown rice exclusively and tends critical steps by hand.
