Named after the historic castle of Tsuyama in Okayama Prefecture, this sake is produced by a brewery founded in 1889 that draws its water from the subsoil beneath the Nakayama Shrine. The brewery uses only Okayama-grown rice for all its expressions, maintaining traditional Bichuu-toji brewing methods.
