Akatsuki Shuzo is located in Yasu City, Shiga Prefecture, a region whose sake-brewing culture is shaped by the exceptionally soft water draining from the mountains surrounding Lake Biwa. The brewery sources locally grown rice and pure mountain water to produce sake that reflects the mild, understated style associated with Omi-region brewing.
