This 2009 vintage umeshu uses Fukui Prefecture Benisashi plums macerated in aged sake from the same year. The base koshu provides a deep, rounded sweetness formed through long room-temperature maturation in Gifu, while the Benisashi plum contributes its distinctive aromatic lift and clean acidity to the final liqueur.
