Yamanoi is brewed by Aizu Shuzo, founded in 1688 in the mountainous Minamiaizu district of Fukushima Prefecture, at an altitude of 600 meters where winter temperatures drop to minus 20°C. Sake is crafted in a traditional earthen warehouse dating to the late Edo period, with the harsh cold environment both suppressing bacteria and enabling slow, deliberate fermentation. The brand is characterized by a mild banana-like fragrance and well-balanced sweetness, acidity, and umami, with a house philosophy of producing sake that is soft, clean, and easy to drink.
