Koshinohakugin is brewed by Takano Shuzo, founded in 1899 in Nishi Ward, Niigata, surrounded by Sagata wetland, the 10th site in Japan registered under the Ramsar Convention, where waterfowl fly overhead throughout the year. The brewery applies the ginjo-zukuri long-term low-temperature fermentation method to all of its sake, from daiginjo down to standard grade, producing expressions that are consistently soft on the palate. While pushing forward with new sensibilities, Takano Shuzo remains committed to the traditional techniques that define Niigata's celebrated brewing identity.
