Kaetsu Co., Ltd., established in 1961 through the merger of sake breweries across three Hokuriku prefectures, is based in Komatsu City, Ishikawa, and draws its water from the snow-melt runoff of Hakusan, one of Japan's three sacred mountains. Kaganotsuki presents its lineup through a lunar phase concept, ranging from 'Sangen' (new moon) and 'Hantsuki' (half moon) to 'Manzuki' (full moon) and 'Gekko' (moonlight), each representing a different style and intensity. The brewery has won multiple gold medals at the National New Sake Competition.
