井出酿造店的前身是江户时代中期(约1700年)创立的酱油酿造业,至江户末期(约1850年),第十六代弥兵卫着眼于海拔850米的凉爽气候与丰沛的富士山泉水,转型投身日本酒酿造,一脉传承至今已历二十一代。富士山素以无河流著称,冬雪融化后渗入熔岩层,历经数十年方才从山麓北侧涌出。「甲斐开运」正是酿造师在严寒之中,以穿透天然熔岩层过滤而成的泉水精心酿制而成。
