Ginganishiki polished to 60% is the basis for this approachable Kariho junmaishu, brewed at the historic 1850-built kura in Daisen, Akita. Medium-hard water from the Omono River, rare in the typically soft-water region, gives Kariho sake its crisp, food-friendly finish.
