Akitasake Komachi, polished to a daiginjo-level 50% despite the junmai ginjo classification, is bottled unfiltered in this muroka expression from Ryozeki. The unfilitered bottling preserves deep umami and a rich, rounded texture alongside the soft sweetness of the variety, with a clean and balanced finish.

秋田县
创始人的祖先从战国末期至江户初期往来于加贺国(今石川县),人称"加贺人",在湯泽留名至今。1874年,"伊藤仁右衛門商店"正式创立,品牌名"両関"取自八代仁右衛門,借用"东剑西酒,东西两横纲"之说而得名。明治中期,七代仁右衛门时代(约1880年代),因院内银山繁盛带动清酒需求大增,当时灘伏見(神户/京都)的大型清酒占据主流,为酿出不亚于它们的佳酿,特派兄弟西呂只右衛門赴外学习技术,此后历代自力培养技术人才,不依赖外部杜氏。明治末年,第九代仁右衛门与直右衛門共同开发出独特的"低温酿造法"和"伊藤式天窗",在第一届全国酒类评鉴会上荣获一等奖,并将相关技术广泛公开,推动了秋田乃至东北地区低温酿造技术的普及。此后,酒藏在坚守优良传统的同时,持续探索创新。
