Ipponjime rice, self-cultivated and self-milled at Onda Shuzo in Nagaoka, Niigata, is polished to 48% for this ginjo under the Tsuzumi label. Low-temperature ginjo fermentation draws out delicate fruity aromas from this proprietary regional rice variety.
