Nakate Shinsenbon rice from Hiroshima is used at a very lightly polished 89% retention, an unusually low-polish honjozo that preserves substantial grain character. Despite the high rice-retention ratio, reviews note a surprisingly clear mouthfeel with rice umami and a sharp, clean acid finish characteristic of this Saijo brewery.
