Junmai Daiginjo Sendaibeniyachokuro is a pure rice daiginjo from Iwate Meijyo in Iwate Prefecture, brewed without added alcohol and polished to at least 50%. The name references a premium curated expression from the brewery. Cold winters in Iwate support the slow, temperature-controlled fermentation required to develop the complex aromas characteristic of junmai daiginjo.
