This 1985 junmai is brewed from Nippon Bare rice polished to 70% and aged at ambient temperature in Gifu. Room-temperature maturation through the seasonal temperature swings of the earthen storehouse, with winters around 4ยฐC and summers around 26ยฐC, gradually develops the rice-derived sugars and amino acids into the brewery's signature amber color and mellow depth.
