Yama, the mountain, is among Akishika's most export-visible bottlings, a straightforward yamahai Junmai that distills the brewery's philosophy into an accessible format. Brewed from organically farmed rice in Nose, Osaka, using the traditional yamahai starter and bottled without charcoal filtration or dilution, it delivers the earthy, layered umami that has earned Akishika a following far beyond Osaka. The name invokes the mountainous terrain of Toyono district where the brewery and its paddies sit, and the sake tastes of that landscape.
