The retro label on this junmai daiginjo from Akishika Shuzo reproduces the brewery's original trademark registered by its founder in 1912, in the style of the Taisho Era, and the sake inside matches that spirit of meticulous preservation. Made from Yamadanishiki rice polished to 50% and aged at low temperature for approximately two years before release, it is produced in limited quantities each year, with some vintages capped at around 380 bottles.
