Tsukinoi Sake Brewery was founded in 1865 near the Kamiso shrine in Oarai, Ibaraki Prefecture, taking its name from the sight of autumn moonlight shimmering on ocean waves. The brewery embraces a sake philosophy akin to wine's terroir concept, fermenting under natural seasonal temperatures without temperature control and using organically certified, locally grown rice from the Oarai area. Their sake is intentionally gentle in character, with concentrated umami, amber-tinged color, and an outstanding capacity to harmonize with a wide range of foods.
