Akebono Shuzo, founded in 1904 in Aizubange Town, Fukushima, is unusual among Japanese sake breweries in having had three consecutive generations of women serve as brewery owner, and the Temmei brand name, meaning dawn before sunrise, shares its meaning with the company name Akebono (daybreak) to express an ethos of honoring tradition while embracing new challenges. The brewery uses only tank-pressing (fune shibori), brews exclusively pure rice sake, and employs cold storage throughout to express what the toji describes as seasonal transitions through the sake. Temmei is positioned as a food-pairing sake, balancing umami, sweetness, and acidity.
