Murayuu

Murayuu was born in 2002 from the vision of brewer Kensuke Muroyama, who set out to break Niigata's reputation for dry, austere sake by modeling his craft on the layered sweetness of wagashi, traditional Japanese confectionery. The brewery operates at a small scale of around 200 koku in the Echigo Plain, deliberately keeping technical information such as polishing ratio, acidity, and sake meter value off its labels, letting taste speak for itself. Murayuu is credited with shifting many drinkers' perception of what Niigata sake can be.
