Takamurakei

Murayu Shuzo was founded in 1948 in Kosudo, Niigata City, and intentionally operates at a small scale of around 200 koku annually, prioritizing craft over volume. The brewery is unusual in that it does not publicly disclose the polishing ratios or technical specifications of its sake, holding that the drinker's own judgment after tasting is what ultimately defines quality. Takamurakei is the house brand, characterized by what the brewery describes as a fine, clear elegance akin to wasanbon sugar, a departure from the typical image of Niigata sake.
