Tamakashiwa

Yamadashoten was founded in 1868 and operates as one of Japan's smallest sake breweries, located in Yaotsucho, Gifu Prefecture, now in its sixth generation. Brewmaster Masaki Uno works almost exclusively alone, producing Tamakashiwa in tiny batches that emphasize close attention to every stage of the process. The resulting junmai sake balances mellow rice character with a refreshing acidity, reflecting the brewery's commitment to handcrafted small-scale production.
