Suigei, whose name translates to Drunken Whale after the sake-loving feudal lord of Tosa, Lord Yamauchi Yodo, traces its origins to a brewery founded in 1872 in the coastal castle town of Kochi. The brewery's philosophy is to make sake that serves as a supporting role to food, and Kochi's soft, mineral-light water rushing from steep mountain slopes gives Suigei sake its characteristic refreshing sourness. In 2018, a second facility, Tosa-gura, was built amid unspoiled nature in the Kanbara district, combining the brewery's traditional techniques with state-of-the-art equipment to pursue the highest possible quality.

Dry sake, loaded with umami. On the nose, I get a whiff of cheesey and dairy sents, with a hint of earthiness and a touch of alcohol. The mouth is dry, as said, with just a pleasant touch of grass. Very pleasant and pairs well with meat and vegetables.
