Product concept Junmai Ginjo Sake brewed in Kochi original sake rice "Gin no Dream". Tosa's local sake grown in Kochi land, from rice structure to sake brewing. Characteristics of the structure The raw rice "Gin no Dream" is the first rice suitable rice that was nurtured in Kochi Prefecture. In the development of varieties, the Kochi Prefectural Agricultural Technology Center was in charge of the brewing test in the breeding process. A variety of Tosa's sake brewing was born during various examinations. The product name "Takashi 54" was named from the test number "Takashi Sake 54" in the growth process of the raw rice "Gin no Yume". The yeast uses traditional Kumamoto yeast to bring out the goodness of raw rice, and carefully brewed it with spring water in the Kagamikawa river basin. Taste characteristics The taste that brings out the goodness of the ingredients is light, but the taste is based on the taste, giving it a solid taste. In addition, the refreshing citrus sourness and subtle Ginjo incense create a light drinking mouth. The light flavor of Tanrei dry brings out the deliciousness of the dishes to match.
