Sugiisami Warabioka Shuzojo was established in 1923 at the foot of Mount Chokai in Yuza Town, Yamagata Prefecture, on a pilgrimage route that supported 33 lodging houses and centuries of sake culture during the Edo period. The brewery uses snowmelt from Mount Chokai filtered slowly through the earth, producing soft and clean mid-soft water that defines the sake's crisp, firm flavor profile and clean finish. Brewing roughly 500 koku annually by hand with fewer than ten brewers per season, Sugiisami prioritizes steady local quality and long-term relationships over broad national distribution.
