Senkin was established in 1806 in Sakura City, Tochigi, and under the 11th-generation Usui brothers the brewery has embraced what it calls Edo-style super-natural sake making, reviving kimoto starters, wooden barrels, no added yeast, and contract-farmed organic rice grown on the same water vein used for brewing. With a motto of do nothing unnecessary, every release is unfiltered and undiluted, built on a domaine philosophy that ties the sake directly to its local terroir.
