Description

SENKINISSEI is a junmai daiginjo using Yamada Nishiki polished to 35% from Senkin in Tochigi. The Issei (first generation) label marks the pinnacle of Senkin's daiginjo range, where Yamada Nishiki polished to near-half its original size is fermented with the same source water used to grow the rice.
