Description
Brewed with organic heirloom Kame no o rice barely polished, retaining about 90% of each grain, then fermented in traditional wooden barrels using only wild, ambient yeast native to the brewery. Bottled muroka genshu, meaning unfiltered and undiluted, with no added yeast or charcoal filtration. The aroma layers green apple, citrus, and vanilla with a touch of wood derived earthiness, while the palate stays bright and lively with juicy fruit, tart acidity, and a savory depth, finishing quick and clean with citrusy tartness.
