Brewed using a traditional kimoto starter with no added yeast, relying instead on native yeast cultivated in the brewery for over two centuries, this sake uses the historical heirloom Kamenoo rice restored to its original genetic form. Expect a ripe banana aroma with lively fruit intensity, and a juicy, acid forward palate shaped by lactic and malic acid that carries a natural sweetness balanced against a zippy, wine like tartness through a clean, refreshing finish.
