Imanishi Shuzo has been brewing Mimurosugi in Miwa, Nara, since 1660, at the foot of Mount Miwa where Ohmiwa Shrine, one of Japan's oldest Shinto shrines, enshrines the god of sake, making this one of the most historically resonant brewing sites in the country. The brewery draws water from an underground vein flowing from the sacred mountain, grows contract rice on the same water source, and revives the Bodaimoto yeast-starter method documented in Japan's oldest known sake brewing records, fermenting some expressions in traditional Yoshino cedar barrels.
