Kujira originates in the Kujira district of Nara Prefecture, where Chiyoshuzo cultivates Yamada Nishiki rice in its own surrounding fields to express a distinctly local terroir. The brand was built around a core concept of achieving daiginjo-level flavor through less aggressive polishing, and the brewery describes its aim as sake that is delicious but not too delicious rather than simply maximizing intensity. The result is a series characterized by mild aromas, refined umami, and a refreshing finish.
