Kawakame Shuzo, founded in 1899 in Hachimahama City, Ehime Prefecture, switched from the traditional toji system to employee-led brewing in 2000, placing full responsibility for quality in the hands of its own staff. The brewery sources water from the Gotanda River that flows directly in front of the kura, and uses Yamadanishiki and Omachi as its primary rice varieties. Kawakame produces a range of sake centered on its special junmai category.
